When I shoot with my old Nikon D40 that was converted for infrared use, I usually set the camera to capture both a Raw file and a JPG that is converted to black and white in the camera. The main benefit of this is it lets me see the resulting image in black and white immediately in the LCD screen on the camera. I almost always use the RAW file when preparing a shot to be shown publicly.
But in this instance I thought the JPG looked pretty good straight from the camera. I made one modest tweak and cleaned up some dust spots and that was it.
